Mojitos are probably our favourite cocktails. We’ll drink most varieties - and using raspberries makes for the perfect summer drink. These ingredients make 2 drinks.
You will need:
about 15 raspberries, plus a couple more for the garnish
about 15 shredded mint leaves, plus garnish
juice of 1/2 lemon
2 tsp simple syrup
50ml (2 measures) white rum
1. Divide the raspberries, mint, lemon juice, rum and simple syrup (equal parts sugar and water, instructions here), between 2 tall glasses. 2. Muddle the ingredients together in the bottom of the glass. 3. Add ice - we normally used crushed ice, but this time we made fancy ice cubes with raspberries and mint inside. 4. Top up with soda water or lemonade.5. Garnish with a couple of raspberries, a sprig of mint, and a lemon wedge.
I love that I can sliiiiiightly class making cocktails as ‘work’.
We’ve long been fans of some good old fashioned double exposure - and the work of photographer Tierney Gearon is some of the best we’ve ever seen. Her work is deeply personal, shot entirely at home or on family trips. Shooting double exposures and leaving the outcomes completely untouched means the end result is left completely to chance, allowing the viewer to construct narratives between the two unrelated elements.
